In jeden Wein von Zahel kommen nur ausgesuchte Trauben aus Wiens besten Lagen. Jeder Wein wird mit großer Sorgfalt gepflegt, geerntet, vinifiziert und ausgebaut. Egal ob Wiener Gemischter Satz, andere Weiß- und Rotweine, Sekt oder besondere Spezialitäten.

The mixed set

Why mixed?

The mixed set itself has a long tradition - not only in Vienna. In the past, winegrowers often only had a single vineyard at their disposal. Planting different grape varieties had many advantages, then as now. The different characteristics of the grape varieties ensure a stable yield and make the vineyard less susceptible to bad weather or wine diseases and pests. As a result, more grape varieties flow into the wine and thus multiply its complexity. This composition gives the wine more acidity and therefore freshness.

Advantages of the Gemischter Satz

The different grape varieties give the wine a variety of unique notes that lend the mixed set its unique composition.

The mixed set

... is a very special white wine. It contains at least three different grape varieties, but they all come from the same vineyard. Not only were they planted next to each other, but they are also harvested and fermented together. The result is a wine that combines the advantages of the different grape varieties.
The methodology

Passion from start to finish

01 Viticulture

A vineyard needs a lot of care and feeling for the vines. We cultivate our vines according to the biodynamic guidelines of Demeter as well as the regenerative principles of the Regenerative Organic Alliance (ROA). We always rely heavily on manual work. We are also committed to a high level of biodiversity through special compost and species-rich planting in each row of vines. At the end of the rows, we cultivate fruit varieties and roses that promote our beneficial insects and also beautify the landscape.

However, we have always done without herbicides and pesticides. And that's a good thing. Many of the vines in our vineyards are already more than 40 years old. It is also home to our indigenous grape varieties such as Orangetraube, Neuburger, Rotgipfler and Zierfandler, which give our Wiener Gemischter Satz that certain something.

02 The reading

When the sun, soil and vine have done their work and the grapes are ripe, the grape harvest begins. And because we only harvest when the weather is at its best, this happens at the end of August at the earliest, but usually in September. We then harvest the grapes 100% by hand within a few weeks. Our quality standards require experienced, trained staff who pay particular attention to careful handling. Harvesting is a responsible task for us. We make sure that only the best grapes go into our wine right from the harvest.

03 Winemaking

04 The last step

Only when it is perfect does our wine go into the bottle. But only temporarily. Because it actually belongs in a glass. That's what we made it for. To toast, drink and enjoy. Cheers!
